Question:
What does it mean when the core of a clove of garlic turns green? Is it safe to use, or am I keeping it for too long?

Answer:
The green core is a sign of germination. Although the clove can sprout and be edible, it will have lost most of its potency and flavour.

Fresh garlic should keep for four to six months, depending on the variety. If it becomes shrivelled and marked, discard it.
