INGREDIENTS

chicken breast fillets, 500g, halved horizontally
olive oil, 1 tablespoon, plus 2 tablespoons extra
lemon, 1, finely grated zest, juice
ground cumin, 2 teaspoons
cos lettuce, 1, leaves torn
chickpeas, 400g can, drained, rinsed
beans, 150g, trimmed, sliced, blanched
feta, 100g, crumbled
craisins, 2 tablespoons
natural seed mix with pine nuts, 2 tablespoons
METHOD

  1. In a shallow dish, combine chicken, oil, zest, 1 tablespoon juice and cumin. Season to taste and mix well. Marinate 10 minutes.

  2. Preheat a char-grill pan on high. Cook chicken 2-3 minutes each side, until just cooked through and grill marks appear. Remove from heat. Cover loosely with foil and rest 5 minutes before slicing thinly.

  3. In a salad bowl, combine lettuce, chickpeas, beans, feta, craisins and seed mix.

  4. In a jug, whisk extra oil and remaining lemon juice together. Season. Drizzle half over salad. Toss well. Top with chicken and drizzle with remaining dressing.
