Steak pizzaiola for $3.40 per serve
INGREDIENTS

olive oil, 2 tablespoons
sandwich (minute) steaks, 8
garlic, 1 clove, crushed
diced tomatoes,
400g can
pitted kalamata olives, 1/4 cup
basil, chopped, 1/4 cup, plus extra to serve
sugar, 1 teaspoon
feta, 100g, crumbled
crusty bread, green salad, to serve
METHOD

  1. Heat half oil in a large frying pan on high. Season steak to taste. Cook 1 minute each side until well sealed. Transfer to a plate and cover with foil to keep warm.

  2. Heat remaining oil in same pan on medium. Saute garlic 30 seconds. Add tomatoes and bring to a simmer. Cook, stirring occasionally, 8-10 minutes, until sauce thickens. Stir in olives, basil and sugar. Season to taste.

  3. Return steaks to pan with sauce and simmer, covered, 1-2 minutes until heated through.

  4. Serve steaks topped with sauce and sprinkled with feta and extra basil leaves. Accompany with crusty bread and green salad.
