Mussels in white wine
INGREDIENTS

1 tablespoon olive oil
1 onion, finely chopped
2 garlic cloves, crushed
½ cup white wine
juice ½ lemon
300ml carton thickened cream
500g mussels, scrubbed and debearded
2 tablespoons finely chopped parsley
crusty bread, to serve
METHOD

  1. Heat oil in a large frying pan on medium. Sauté onion and garlic for 2-3 minutes, until onion is tender.

  2. Stir in wine and juice. Bring to the boil. Reduce heat. Simmer for 2-3 minutes until liquid has reduced by half.

  3. Blend in cream and season to taste. Bring to boil. Reduce heat and simmer for 3-5 minutes until sauce thickens slightly.

  4. Add prepared mussels, stirring to coat with sauce. Simmer, covered, for 3-5 minutes, until mussels open (discard any unopened ones). Stir through parsley.

  5. Serve mussels immediately with bread for dipping, if desired.





Top tip Clean mussels by scrubbing shells with a firm brush and removing fibrous 'beard' by pulling with a knife.
