10 Minute pastas: Bruschetta pasta
INGREDIENTS

375g pasta
4 chopped tomatoes
1 chopped red onion
100g crumbled feta
2 tablespoons extra-virgin olive oil
1 tablespoon red wine vinegar
1 crushed garlic clove
½ cup fresh basil leaves
METHOD

  1. Cook pasta following packet instructions.

  2. In a large bowl, combine all other ingredients, except for the basil leaves. Season to taste.

  3. Toss through hot pasta with ½ cup fresh basil leaves.
