Sesame noodles with peanuts & basil

INGREDIENTS

peanut oil, 1 tablespoon
ginger, peeled, finely chopped,
1 1/2 tablespoons
garlic, 2 cloves, crushed
sesame oil, 2 tablespoons
soy sauce, 1 1/2 tablespoons
balsamic vinegar, 1 1/2 tablespoons
sugar, 1 heaped tablespoon
salt, 1 1/2 teaspoons
fresh Chinese egg noodles, 500g
green onions, 12, thinly sliced
diagonally
peanut halves, 1/2 cup, toasted
basil leaves, 1/2 cup, roughly torn
METHOD

  1. Heat oil in a small frying pan on medium heat. Saute ginger and

  2. garlic 1 minute. Transfer to a large bowl. Whisk in sesame oil, soy sauce, balsamic vinegar, sugar and salt.

  3. Place noodles in a colander in the sink and gently separate strands. Bring a large saucepan of salted water to the boil. Add noodles and cook

  4. 3-4 minutes, stirring occasionally, until tender. Drain and rinse under cold water. Drain again and transfer to bowl with soy mixture.

  5. Toss green onions through. Set dish aside 1 hour, tossing occasionally.

  6. Add peanuts and basil. Toss gently and season to taste. Serve at room temperature.



TOP TIP
  • This makes a delicious and simple lunch to take to work. Add shredded chicken or barbecued duck, if liked.
