Easy fish patties
INGREDIENTS

500g firm boneless white fish fillets
1 medium onion, finely chopped
1 egg, lightly beaten
1 teaspoon chicken-stock powder
1 cup grated tasty cheese
1/3 cup self-raising flour
Salt and pepper to taste
Extra self-raising flour for coating
Vegetable oil, for shallow-frying
Fresh dill and lime wedges to serve
METHOD

  1. Place fish in a large pan; cover with water. Bring to boil; simmer, covered, until fish is tender. Drain; pat dry with absorbent paper.

  2. Place fish in a large bowl; mash with a fork. Add onion, egg, stock powder, cheese, flour and salt and pepper; mix well. Divide mixture into 12 portions; coat in flour.

  3. Heat oil in a large pan. Add patties; flatten slightly, shallow-fry until lightly browned on both sides and heated through.

  4. Serve patties with fresh dill and lime wedges.
