Zucchini slice
INGREDIENTS

5 eggs
2 medium zucchini, grated
420g can corn kernels, drained
3 rashers rindless bacon, finely chopped
1 cup grated tasty cheese
1 cup self-raising flour, sifted
1 onion, finely chopped
¼ cup oil
METHOD

  1. Preheat oven to moderate, 180°C. Lightly grease a 23cm square cake pan. Line base and sides with baking paper.

  2. Whisk eggs in a large bowl. Add zucchini, corn, bacon, cheese, flour, onion and oil. Season to taste.

  3. Pour into prepared pan. Bake for 35-40 minutes, until golden and firm. Cool in pan for 10 minutes before transferring to a wire rack to cool completely.

  4. Serve warm or cold, cut into squares.
